Valentine’s Day Low Carb Pizza

Indulge in a guilt-free Valentine’s Day treat with our Low Carb Pizza recipe! Featuring a flavorful cauliflower crust and topped with savory ingredients, it’s the perfect way to enjoy a romantic evening without compromising on taste or nutrition!

SERVING SIZE: 1-2

CAULIFLOWER CRUST:

3 cups cauliflower

1/2 cup shredded mozzarella

1/2 cup grated parmesan

1 egg

Seasoning: Italian seasoning, Garlic powder, Onion powder, Dried parsley (I do about half teaspoon of each for great flavor!)

FOR THE PIZZA:

1 cup red sauce

2/3 cup shredded mozzarella

1/3 cup grated parmesan

5-8 pepperonis

3-4 fresh basil leaves, finely chopped

Optional: hot honey

The recipe:

Preheat your oven to 350 degrees.

Boil your cauliflower for 5 minutes to tenderize then strain. Squeeze out all excess water using a cheesecloth or paper towel. Very important part! Make sure to squeeze water out as much as possible!!! 

In a mixing bowl, combine your cooked cauliflower, mozzarella, parmesan, egg, garlic powder, Italian seasoning, onion powder, and dried parsley. Mix till smooth or smooth enough. I personally don’t mind some small pieces of cauliflower.

Refrigerate dough for 1 hour or freeze for 15 min.

Grab a baking sheet and lightly grease sheet with olive oil to prevent sticking. 

Shape the cauliflower mixture into a crust. A heart if you want!! Try to make the crust pretty thin as you can, the thicker it is, the soggier the crust will turn out. 

Bake the crust alone, with no toppings, for 25 minutes.

Remove the crust after it’s baked and assemble your pizza. Add your sauce, cheese, pepperoni, or any other topping of your choice! 

Now it’s time to make your pizza!

Return the pizza to the oven and bake for another 5-6 minutes until the cheese melts.

Once the pizza is done, sprinkle finely chopped basil leaves over the top. For an extra kick, drizzle hot honey over the pizza.
