Perfect for a low carb taco Tuesday, but I promise you will still be satisfied!! And that’s coming from a biiiig pasta + carb girl😉 plus it’s a win win because they took 10 minutes to make!
The recipe:
Heat a drizzle of olive oil in a skillet over medium heat.
Add the ground turkey to the skillet and break it up with a spatula. Cook until browned and cooked through.
Sprinkle 1 tablespoon of taco seasoning over the cooked turkey. Stir well to ensure the seasoning is evenly distributed.
You might want to add a bit of water if needed to mix the seasoning thoroughly with the turkey, sauteing for another 1-2 minutes.
While your turkey cooks, prep your red onion and cilantro by finely chopping & dicing.
Wash and prepare the lettuce leaves, separating them carefully to form cups.
Spoon the seasoned turkey mixture into the lettuce cups.
Top each lettuce cup with shredded Mexican blend cheese, red onion, cilantro, sliced avocado, and any optional toppings such as sour cream, Greek yogurt, or Trader Joe’s elote Greek yogurt dip.

1head oflettuce(I used gem, but romaine, or butter lettuce works wonderful)
1/2red onion,diced
1avocado,diced
Optional sour cream, Greek yogurt, or I’m using Trader Joe’s elote Greek yogurt dip which is DELICIOUS
