High protein egg bites for a grab-and-go in the am post workout!! Keep refrigerated. Microwave for 30-45 sec when you’re going to eat them!
The recipe:
Preheat your oven to 375 degrees.
In a large mixing bowl, combine your eggs and cottage cheese and whisk till smooth.
Add in your diced green onions. (I used kitchen sheers and cut them straight into the bowl – way easier in my opinion!)
Then add in your cooked ground turkey, making sure to crumble into small pieces.
Finely chop your spinach (again, I used kitchen shears to cut the pieces straight into the bow!) I like to make sure to get the spinach as small as possible to make it easier to eat!
Mix in your shredded cheese and stir your egg mixture! Season with a little garlic salt and pepper!
Now it’s time to bake! I recommend using avocado spray or liners to keep the bites from sticking! I used a measuring cup to scoop the mixture into the muffin pan.
Try to keep them at even levels so they can cook evenly! Keep in mind that the muffins will rise as they cook, so don’t fill it to the top!
Optional: top with even more shredded cheese!
Bake for about 15 minutes at 375! Once cooled, store in an airtight container in the fridge for about 3-4 days or in the freezer! Enjoy the easiest high-protein breakfast on the go!! xx
