This rice is the perfect easy meal, side or just a tasty way to sneak in those veggies! I love how easy this recipe really is on those days you have zero effort but stil want to be healthy!!
The recipe:
In a stockpot, bring 2 cups of water to a boil.
While your water comes to a boil, prep your veggies. Dice your onion, broccoili, and cauliflower.
Once the water is boiling, add the rice to the pot. Bring the pot to a simmer after adding the rice.
Cook rice for 2-3 minutes. After the initial 2-3 minutes, add the diced onions to the pot.
Cook for another few minutes until the onions are softened, then add in your diced broccoli and 1 cup water.
Cook for 5-7 minutes and incorporate the peas and cauliflower rice into the pot.
Cook for another few minutes until the water evaporates, and the rice is cooked through.
Fluff the rice and vegetable mixture with a fork. Serve the dish, and enjoy! xx
