Meal Prepped Chopped Salad

MEAL PREPPED CHOPPED SALAD!!🥗If you’re wondering how to simply pack your salad for work or school, this is my favorite way. This chopped salad is absolutely delicious, but feel free to mix & match the ingredients to best fit your taste buds!!! 

SERVING SIZE: 1 large salad

FOR THE GARLIC TAHINI MUSTARD DRESSING:

1 1/3 tablespoon olive oil

1 tablespoon tahini 

1/2 tablespoon mustard 

Touch of garlic powder, salt, pepper

Squeeze of lemon 

FOR THE SALAD:

1/2 cup chickpeas 

6-8 olives, pitted

1/2 cup cucumbers, sliced 

1/2 cup sharp cheddar cheese, diced (mozzarella works too)

1/2 cup salami, diced

2/3 cup rotisserie chicken, shredded (or chicken breast works too!)

2 tablespoons pepperoncinis 

2 tablespoons red onion, finely diced

1 1/3 cups packed lettuce

The recipe:

To prepare the garlic tahini mustard dressing, in a small bowl, blend together olive oil, tahini, mustard, lemon juice, and a hint of garlic powder, salt, and pepper until achieving a smooth consistency. Then set your dressing aside to prep your salad ingredients!

Begin by dicing the cheese, salami, and red onions. Slice the cucumbers, finely chop the lettuce, and shred the rotisserie chicken or chicken breast.

Now, it’s time to assemble your salad in layers!

In a large mason jar, start with your dressing then add in your chickpeas (because they won’t get soggy and they’ll marinate in all the yummy flavors of the dressing.

Layer the remaining ingredients in order of their likelihood to retain crispness, starting with cheese, then olives, cucumbers, salami, chicken, pepperoncinis, red onions, and finally, lettuce.

Place into the fridge until you’re ready until ready to serve, ideally within 2-3 days for optimal freshness.

When you’re ready to eat, pour all your ingredients into a bowl, toss, and enjoy!! xx
