Summer is finally here and that means SOOO many fresh fruits and vegetables! Today I decided to put a vegetarian twist on one of my favorite summertime meals!
Here is what you will need:
4 full pieces of romaine lettuce
1/2 cup of sliced mushrooms
1 cup of slaw (I used a mix from Trader Joes)
1 carrot, finely sliced or chopped (I actually just use a peeler to get really thin slices)
To make dressing, mix all ingredients below in a small container:
1 tbsp. soy sauce or coconut aminos
To make the lettuce cups:
First, rinse and pat dry 4 full leaves of romaine and set out on a plate.
Next, sauté the chopped onion in 1 tablespoon of olive oil for about 3 minutes. Then add in your sliced mushrooms and cook for 1 minute.
Add slaw and cook for another 3-4 minutes or until your veggies reach your desired crunch level!
Scoop out veggie mixture and place in the lettuce cups.
Top with sliced carrots (I didn’t cook mine because I like having that fresh crunchy texture on top), finely sliced green onion and sesame seeds! Then add 1 spoon of dressing to each lettuce cup! Feel free to add sriracha or hot sauce if you like some spice! Enjoy!!
