These crispy, spicy buffalo tofu wraps are a delicious and satisfying plant-based meal, packed with flavor and crunch! Perfect for a quick lunch or dinner.
The recipe:
Start by pressing the tofu to remove excess moisture. Place a paper towel on your countertop, place the tofu on top, then cover with another paper towel. Place a heavy pan on top and let it sit for 10-30 minutes to absorb the water.
Once the tofu is pressed, cut it into small cubes. Toss the tofu in 2 tbsp of buffalo sauce, ensuring it’s evenly coated. Let it marinate in the fridge for at least 2 hours to allow the flavors to soak in.
After marinating, add equal parts breadcrumbs and flour to the tofu, tossing until each piece is coated with the mixture (the buffalo sauce will help the coating stick).
Preheat your air fryer to 400°F. Add the breaded tofu bites to the air fryer basket and cook for 15 minutes, shaking halfway through to ensure even cooking.
Once crispy, remove the tofu from the air fryer and toss it in the remaining 2 tbsp of buffalo sauce.
Lay a tortilla flat and add a layer of shredded lettuce. Top with the crispy buffalo tofu, diced celery, green onions, shredded carrot, and a drizzle of vegan ranch.
Roll up the tortilla, cut in half if desired, and enjoy your flavorful vegan buffalo wrap!
