4 tbsp Buffalo sauce (2 for marinating/2 for coating after frying)
2 tbsp breadcrumbs
2 tbsp flour
2 large tortillas (I’m using a spinach wrap, but you can really use whatever)
1/2 cup shredded lettuce
1/4 cup diced green onions
1/4 cup diced celery
 1 large carrot (shredded)
2 tbsp vegan ranch
Here’s how you make it:
First, we need to dry out the tofu: for this, place a paper towel down on your countertop, then place your tofu, then cover with another paper towel and top with a heavy pan. Let sit for about 10-30 minutes to make sure all the water is soaked out.Â
Cut tofu into small cubes, toss in buffalo sauce. Mix buffalo sauce evenly throughout the tofu and marinate in the fridge for at least 2 hours.Â
After marinating, add in equal parts breadcrumbs and flour into the tofu (the breadcrumbs and flour will stick to the tofu bc of the buffalo sauce)!!
Add your breaded buffalo tofu bites to an air fryer and cook at 400 for 15 minutes, shaking halfway through.Â
Take the fried tofu out and toss in a little more buffalo sauce
On a tortilla, place some shredded lettuce, crispy tofu, celery, green onions, carrot shavings and vegan ranch!
