Here’s what you need: (this makes 2 servings)
1.5 cups finely diced cauliflower
1/2 onion
8oz ground beef or 1/2 package (I try to buy extra lean)
Garlic Powder
Onion Salt
1 tsp taco seasoning
4 tortillas
1/2 cup shredded cheese
Toppings: shredded lettuce, avocado, green onion, hot sauce and greek yogurt (healthy sub for sour cream!)
Here’s how you make it:
In a frying pan, cook cauliflower and onions for about 5 mins on medium (cauliflower takes a little longer to cook so that’s why we add it in first)
Add in ground beef, add garlic powder, onion salt and taco seasoning and cook for about 5-7 minutes or until the ground beef is fully cooked
On the side, take out a baking sheet, 4 corn tortillas. Lightly coat with avocado or olive oil (can use spray too)
Bake tortillas in the oven at 450 degrees for 3 minutes and then take them out, lightly fold in half and stuff with the beef cauliflower mixture and top with cheese and put back in the oven for 3 more minutes!
Then top with shredded lettuce, green onion, avocado, hot sauce and I suggest using greek yogurt as sour cream!
