This recipe is a great one to make for a big group! If you have a lot of avocados on hand and want to try and make something other than guac, you NEED to try this recipe!!
Here’s what you need:
4 avocados
1/2 lb of ground turkey
1/2 red onion, chopped
1 tbsp taco seasoning
Handful of shredded cheese (I’m using a pepper jack, mozzarella & cheddar blend)
Green onion, chopped
Here’s how you make it:
Cut all of the avocados in half, take out the pit and scoop out about half of the avocado, leaving a thin layer around the entire skin (obviously don’t throw this part out, just put in in a bowl and use it for guac!!)
Then in a sauté pan, add some olive oil and red onion. After about 1 minute, add in your ground turkey and cook for about 7-8 minutes or until fully cooked. Add in taco seasoning.
Right before you are about to take it off, add the shredded cheese on top for about 1 minute, or until it completely melts.
Then fill all of your scooped avocado boats with the ground turkey mixture and top with green onions and hot sauce!
