Turkey Avocado Boats
This recipe is a great one to make for a big group! If you have a lot of avocados on hand and want to try and make something other than guac, you NEED to try this recipe!!

Cut the avocados in half and remove the pits. Gently scoop out about half of the flesh from each half, leaving a thin layer around the skin to create “boats.” Reserve the scooped-out avocado to make guacamole later!
Heat a drizzle of olive oil in a sauté pan over medium heat. Add the chopped red onion and cook for 1 minute until fragrant.
Then add the ground turkey and cook for 7–8 minutes or until fully cooked, breaking it up with a spoon as it cooks. Stir in the taco seasoning.
Once the turkey is cooked through, sprinkle the shredded cheese over the top. Let it melt for about 1 minute, then remove the pan from heat.
Fill each avocado boat with the turkey mixture. Top with chopped green onions and a drizzle of hot sauce if desired.
