Avocado fries with creamy, spicy cashew sauce

Avocados are life, IYKYK. Always testing out new recipes with avocados and tried making some avocado fries and they actually came out really well!

Here’s what you need for the fries:

1 avocado

1/2 cup flour

1/2 cup panko breadcrumbs

2 eggs

Olive oil for frying

Here’s what you need for the sauce:

1 cup of cashews

1/2 cup water

1 tbsp nutritional yeast

1/4 teaspoon onion salt

1/ tsp hot sauce

Juice from 1/2 a lime

1 clove of garlic (or 1 tsp crushed garlic)

 

Here’s how you make it:

Fries:

In a small bowl, mix flour and breadcrumbs together.

In a separate bowl, whisk 2 eggs.

Cut the avocado in half, and then with the skin still on, cut it into slices and then remove from the skin.

Dip each avocado fry in egg and then cover with the flour/breadcrumb mixture. Make sure the avocado is completely coated in the mixture (this will ensure that your fries are super crispy)!

Completely coat a sauté pan on medium heat with oil. I used olive oil but you can use whatever you are most comfortable using when frying!

Place each fry in the pan and cook for about 2-3 minutes on each side or until golden brown. Make sure to keep an eye on these as they cook super quickly!!

Cashew sauce: 

Soak cashews in water for a 2-3 hours. Then add to a blender with all remaining ingredients. Blend until creamy and then add any additional seasoning to your liking!
