Spinach Artichoke Chicken Taquitos (in collab with @broccyourbody) !!

SERVING SIZE: 12 TAQUITOS

1 2/3 cups shredded chicken

1 cup chopped artichokes 

1 cup chopped spinach 

1/2 cup greek yogurt 

2/3 cup sour cream 

2/3 cup mozzarella

1/2 cup parmesan

1 teaspoon salt

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon pepper 

12 corn tortillas 

Avocado oil spray 

The recipe:

Preheat your oven at 400 degrees.

Prep your artichokes and spinach by finely chopping. If your chicken isn’t shredded, make sure to get as shredded as possible.

In a bowl mix together your chicken, chopped artichokes, chopped spinach, greek yogurt, sour cream, mozzarella, parmesan, salt, garlic powder, onion powder, and pepper.

Scoop the mixture into your tortillas and roll. Place your taquitos on a baking tray with then opening-side down so they stay closed. Spray generously with avocado spray to get nice and crispy.

Bake at 400 for 15 min, flip, bake another 10.
