Spicy Sausage White Bean Potato Soup

Get ready to warm up your taste buds with a hearty and comforting bowl of Spicy Sausage White Bean Potato Soup. Bursting with a medley of spicy sausages, creamy white beans, and tender potatoes, this recipe is a heartwarming bowl of pure comfort food -that has 5 different veggies. I promise, this soup is sure to become a household favorite.

10 oz spicy sausage (I’m using chicken)

1 1/3 cup diced onion 

1 cup diced carrots 

2 cups diced potatoes, or one large cubed

7-8 cups broth 

1 can white beans, or 15 oz 

1.5 tablespoon tomato paste 

2 tablespoons fresh basil 

1/3 cup half and half 

3 cups spinach

2/3 cup parmasean

Seasonings: salt, pepper, garlic powder

The recipe:

Prep your veggies by peeling & dicing your carrots, onions, and potato. Then prep your sausage by dicing and removing the casing for better texture.

Sauté your sausage in a stock pot on medium heat for 2-3 minutes then add in your diced onions and carrots. Sautee for another 2-3 minutes or until your onions are translucent.

Add your tomato paste, broth, and seasonings (to taste) to your pot, stirring to combine thoroughly. Add your diced potatoes to the pot and bring your broth to a boil.

Once the broth begins to boil, turn down the heat so that the soup doesn’t boil over. Place the lid back on and cook for about 25 minutes and add in your white beans, spinach, half n half and parmesan.

Bring to a simmer and cook for another 2-3 minutes then add in your fresh basil then serve!
