Simple Mediterranean Quinoa Salad

Making one of my favoriteee simple vegetarian lunches, which is also wonderful to meal prep! 🥗 I added avocado to mine but if you want to meal prep- I suggest leaving it out and adding it right before you eat or serve! This salad is so simple but is packed with SO many great nutrients and flavors!! Also, I normally use chickpeas instead of white beans but didn’t have them handy. Feel free to swap out the beans for chickpeas for even deeper Mediterranean flavors!

SERVING SIZE: 3-4

2/3 cup uncooked quinoa, (usually around 1 1/2 cups water to cook, but follow your packaging instructions)

1 cup cherry tomatoes, diced

1 cup cucumber, diced

2/3 cup feta, crumbled

1/3 cup red onion, diced

1 cup white beans, rinsed

2.5 packed cups baby spinach, finely chopped

1 lemon, juiced

1 avocado, diced (option for meal prep to add later!)

2 tablespoons olive oil

Seasonings: garlic powder, salt and pepper to taste

The recipe:

Cook your quinoa according to the package and let cool off for a bit before adding to your salad.

Prep your veggies by dicing your tomatoes, red onion, and cucumber; finely chopping your spinach; and rinsing your white beans after straining from the can!

Add your quinoa, spinach, white beans, red onion, tomatoes, and cucumber to a bowl.

Now it’s time to make your dressing! Juice your lemon straight into the bowl and stir in your olive oil, garlic powder, salt, and pepper.

Finally, add in your diced avocados! However – if you’re using this recipe for meal prep, I recommend holding off on adding this in till you serve or eat it!
