Oatmeal Cranberry Orange Muffins

There is something about the smell of orange zest around the holidays that is just so incredibly festive and comforting!! These Oatmeal Cranberry Orange Muffins are the ultimate grab and go meal for those days that you don’t have time to even think about breakfast and still want to eat something healthy (ish) that actually tastes good too! This recipe will make 12 standard muffins!
DRY INGREDIENTS:
  • 1 cup old fashioned oats
  • 3/4 cup flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • Zest of one orange
WET INGREDIENTS:
  • Juice of one orange (approximately 1/3 cup of juice)
  • 1/2 cup of almond milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp olive oil
YOU WILL ALSO NEED:
  • 1 cup chopped cranberries
  • 1/4 chopped nuts (optional!)
Mix dry ingredients in one bowl and mix wet ingredients in another bowl.
Add dry mix to wet mix and stir just until combined!
Try not to over mix because your muffins will lose their fluffiness! Then fold in the cranberries and nuts, if you’re using them!
Pour batter into paper-lined or greased muffin tin and then bake at 350 degrees for about 18 minutes or until muffins are golden brown!!
