Healthified Spinach & Artichoke Dip with sweet potato “chips”

Ok so my favorite dip (besides guacamole) is spinach and artichoke dip!! I wanted to try and make it a little healthier, so I experimented and it actually came out SO GOOD!!!

Here’s what you will need:

2 cups of baby spinach 

1 can of whole artichoke hearts drained and broken up into pieces 

3 oz light cream cheese

1/2 cup plain Greek yogurt 

1 cup (Parm and mozzarella mix) 

1 tbsp minced garlic 

Salt and pepper to taste

 

 

 

 

 

 

 

 

Mix everything together in a bowl! If you need to soften everything up to be able to mix it (like I did) you can just pop it in the microwave for 20 seconds! 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Top with a handful of Parmesan and mozzarella before baking!

 

 

 

 

 

 

 

 

For the sweet potato “chips”: Cut 3 large or 6 small sweet potatoes into thin slices and lay them out on a baking sheet! Coat with olive oil and salt and pepper to taste! 

 

 

 

 

 

 

 

 

Put both the dip and the “chips” at the same time and cook at 400 degrees for 20 minutes! 

Optional: broil the sweet potato chips for 2-4 minutes at the end of you want them to to be crispy! You can also do the same for the dip if you want it to have a nice crispy layer of cheese on top! You know I like everything extraaaa crispy!!!
