No-Bake Chocolate Chip Cookie Dough Fudge

No baking, no flour needed – the healthiest fudge you’ll ever find! You will need some extra time to soak the cashes & freeze but otherwise, prep is a breeze!! xx

SERVING SIZE: 12 bars

3 cups raw cashews

2.5 cups water, to soak

2/3 cup water, to blend

4 dates, pitted

1/2 cup melted coconut oil

1/3 cup maple syrup

1 teaspoon vanilla extract

1 teaspoon salt

1 teaspoon cinnamon

1 cup chocolate chips, to mix in

1/3 cup chocolate chips, to top

The recipe:

Soak your cashews in 2.5 cups of water for 2-3 hours. After soaking, drain the water and add the cashews, along with 2/3 cups of water and 4 pitted dates, to a blender. Blend until smooth, then transfer the mixture into a bowl.

Combine the blended mixture with melted coconut oil, maple syrup, vanilla extract, salt, cinnamon, and your desired amount of chocolate chips.

Once thoroughly mixed, transfer the mixture onto a baking sheet lined with parchment paper. Use a spatula to smooth it into an even layer, then sprinkle additional chocolate chips on top.

Place the baking sheet in the freezer for at least 4 hours. Once set, indulge and enjoy your guilt-free treat! xx
