Loaded Cauliflower and Potato Soup

Here’s what you need:

3 cups of cauliflower

3 cups potatoes

1 cup diced onion

2 garlic cloves

2 tbsp butter

Seasoning: garlic salt, onion salt, vegeta, pepper

4-6 slices of bacon

Toppings: olive oil, chopped green onions and shredded cheese!

Here’s how you make it:

Cut up and boil cauliflower and potatoes until fork tender (about 10-12 minutes) and drain it after they are done.

In the same pot, add garlic, onion, and butter and cook for about 4-5 minutes or until the onions start to get brown.

Add back in your veggies and add veggie broth. Mix everything together with an immersion blender.

Season with garlic salt, onion salt, vegeta, and pepper.

Cook bacon to your liking….I like mine EXTRA crispy!

Top with crumbled bacon, olive oil, green onions and cheese!
