High Protein Buttermilk Blueberry Pancakes 

These pancakes are the perfect high-protein breakfast option WITHOUT bananas! So many of you have been asking for a banana-free pancake recipe, so here it is! Packed with protein from cottage cheese, you can satisfy that sweet tooth without feeling guilty!

1 cup rolled oats

1 cup cottage cheese 

2/3 cup buttermilk

1 large egg 

1/2 teaspoon of cinnamon 

1 teaspoon vanilla extract 

Blueberries to your liking!

Optional Toppings: vanilla greek yogurt, cinnamon, powdered sugar, maple syrup, fruit of choice

The recipe:

Blend your rolled oats until smooth & the consistency of flour. Blend together your oat flour, cottage cheese, buttermilk, egg, cinnamon, and vanilla extract.

Add tablespoon of butter to pan and warm on low to medium heat.

Once the pan is heated, spoon your batter in and top with blueberries.

Cook on low-medium heat for around 5-6 minutes, then flip and cook for an additional 5-6 minutes. You can peek underneath to check if it’s cooked through.

Top with your optional vanilla greek yogurt, cinnamon, powdered sugar, and or maple syrup!
