Fried Egg Hash

This one-pan breakfast dish is so simple to make and is packed full of nutrients!! It’s also so easy to make into larger batches for big groups – just add more veggies and eggs!!

SERVING SIZE: 2

2 cup potato, diced

1 cup red onion, diced

1/2 cup corn

1/2 cup shredded cheddar cheese

4 large eggs

1/4 cup green onion, finely chopped

Seasonings: salt, pepper. Lawry’s

The recipe:

NOTE: I suggest using a pan that has a lid or finding something that’s safe to cover your pan!

Prep your veggies by dicing your potatoes and red onion.

First, to make the breakfast potatoes, I cooked them in half an inch of water. The water will evaporate and perfectly cook the potatoes enough. Then add butter to cook them a little more and really crisp them up!

Season your potatoes well and add your diced red onion. Add in your corn after 1-2 minutes.

Crack your eggs right on top of your veggies and cover! Let the eggs cook to your liking and top with your green onion.

Once the eggs have cooked to your liking, serve and enjoy!! xx
