This salad is SO delicious and SO easy to meal prep, so I always make a lot! It’s also so refreshing and pairs well with any main dish!
Here is what you will need:
1 cup tomatoes soaked in garlic and olive oil, diced
1 cup fresh mozzarella, diced
1 avocado, diced
1-2 tbsp pesto
1 tsp minced garlic
1 tbsp olive oil
Squeeze of lemon
Mix everything together and add salt and pepper to taste. You could also add some red pepper flakes for some extra spice!
Also! I wanted to share 3 helpful tips that prevent avocados from turning brown:
- Use lemon! The acidity from the lemon will help “cure” the avocado and prevent it from browning
- Keep the pit in! If you keep the pit in the avocado or in the bowl after chopping/mixing the avocado, it won’t turn brown! Just be sure to remember take it out when you’re ready to eat!
- Wait until you are ready to serve/eat the salad and add your avocado in last minute to make sure it looks fresh and stays green!!
