Stuffed Spaghetti Squash Rings

So you guys probably know by now how much I LOVE spaghetti squash haha! The only thing that holds me up from making it ALL the time is that it does take quite a bit of time to cook in the oven. So today I tried out something new…cutting the spaghetti squash into slices instead of halves, thinking it would take less time and it actually exceeded my expectations in every way!!!

So first, I sliced up my squash into rings (scooped out the seeds of course) and put them in the oven at 400 degrees for about 15-20 minutes (half the time as it normally takes to cook spaghetti squash) or until they started to get a little brown and the inside was easily shreddable!

 

 

 

 

 

 

 

 

While my squash was in the oven, I sautéed 1/2 an onion and 1 clove of garlic in some olive oil. Once those cooked down I browned 1 lb of ground turkey. Next I added 1/2 a cup of chopped tomatoes and 1 cup of spinach and cooked down for 1-2 minutes.

 

 

 

 

 

 

 

 

When the squash was done, I added the ground turkey mix and topped with a scoop of pesto, red pepper flakes and shredded parmesan cheese and WOW….seriously, you guys have to try!!! My new fav weeknight meal!
