These Sweet Potato “Nachos” are a healthy twist on a classic comfort food, loaded with savory toppings and packed with flavor. They’re perfect for sharing with friends or enjoying as a satisfying meal any time of day! I made these for some of my friends a few weeks ago and they were a HUGE HIT!
The recipe:
Preheat your air fryer to 400°F. Add sweet potato fries in a single layer, and cook for 15-20 minutes, shaking halfway through, until crispy and golden.
While the fries are cooking, heat a pan over medium heat and cook the ground turkey with taco seasoning according to package instructions, breaking up the meat as it cooks. Set aside once browned.
In another pan, heat olive oil over medium heat. Add the chopped zucchini (or other veggies) and sauté for 3-4 minutes until tender. Season with salt and pepper to taste. Set aside.
Once the fries are done, spread them evenly on a cookie sheet or large baking dish. Layer with shredded cheese, ground turkey, and sautéed veggies.
Place the sheet under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Keep an eye on it to avoid burning!
Once melted, remove from the oven and top with your favorite toppings like chopped green onion, diced avocado, Greek yogurt or sour cream, buffalo ranch, and a drizzle of hot sauce.
