The healthiest, crispiest tacos that require absolutely no deep frying! Feel free to use your protein of choice!
6 corn tortillas
8-10 oz. / 1 package ground beef
2/3 cup corn
1 cup mexican cheese
2/3 cup red onions, diced
1/2 cup green chilies, diced
1/2 lime, to squeeze
1/4 cup greek yogurt
1-2 tsp hot sauce of choice
Optional: 1/2 avocado to top
Seasonings: taco seasoning, garlic powder, salt and pepper
Turn on your broil setting for your oven.
In a saute pan, add your ground beef and cook for about 10 minutes, then add in your taco seasoning, salt and pepper.
In another pan, heat your corn till charred, about 3-4 minutes, or until tender.
Put the tortillas covered with a little bit of olive oil on a baking tray, and add a little bit of your cooked ground beef to each tortilla. Add your charred corn, red onion, green chillies, and cheese! Fold over and place in the oven.
Add to the oven for 2-3 minutes on each side to ensure that your tacos are nice and crispy!
While the tacos broil, combine your greek yogurt, hot sauce and lime.
Top with diced avocado and a dollop of your Greek yogurt mixture, and enjoy! xx
