One of my favorite salads – especially because it includes bacon! This salad is so easy to make and every bite is full of flavor! Make it for your next meal, party, or meal prep (and separate your dressing on the side)!
FOR THE SALAD PORTION:
4-6 cups lettuce, finely chopped
2/3 cup tomatoes, diced
1/2 cup red onion, diced
2/3 cup chickpeas
1/2 cup cucumber, diced
1/3 cup peppercinis, diced
2/3 cup bacon pieces
1 cup chicken, diced
1/2 avocado, diced
2/3 cup parmasean
FOR GARLIC LEMON BALSAMIC:
1.5 tbsp mayo
2 tbsp olive oil
1 tbsp lemon juice
1.5 tbsp balsamic vinaigrette
1 tbsp garlic paste
Seasonings: salt and pepper to taste
The recipe:
For your bacon and chicken, I recommend cooking ahead of time! Feel free to use the chicken of your choice (grilled, rotisserie, etc.)!
Prep your salad ingredients, making sure to dice and chop everything finely! I personally think that the smaller you chop your ingredients, the better your salad tastes!
Add all your lettuce, tomatoes, chickpeas, red onion, cucumber, pepperonis, bacon, and chicken to a bowl. Then top it with your parmesan!
To create your Garlic Lemon Balsamic, combine your mayo, olive oil, lemon juice, balsamic vinaigrette, garlic paste, and salt and pepper to taste in a separate bowl!
Pour over, toss, and enjoy!! xx
