Crispy Baked Beef Tacos

SERVING SIZE: 4 tacos

4 corn tortillas

8-10 oz. / 1 package ground beef

1 cup mexican cheese

2/3 cup red onions, thinly sliced

1/2 lime, to squeeze

1/4 cup greek yogurt

Optional: 1/2 avocado to top, hot sauce of choice

Seasonings: taco seasoning, garlic powder, salt and pepper

The recipe:

Turn on your broil setting for your oven.

In a saute pan, add your ground beef and cook for about 10 minutes, then add in your taco seasoning, salt and pepper. 

Put the tortillas covered with a little bit of olive oil on a baking tray, and add a little bit of your cooked ground beef to each tortilla. Add your red onion and cheese! Fold over and place in the oven.

(I used the sides of the baking tray to keep the tacos folded since they were filled pretty full!)

Add to the oven for 2-3 minutes on each side to ensure that your tacos are nice and crispy!

Top with diced avocado and a dollop of your Greek yogurt, and enjoy! xx
