I typically use a lot of meat and dairy in my recipes and a lot of you were requesting a vegan meal so I decided to make a creamy, vegan, vegetable soup! It turned out much better than I was expecting, it’s so comforting and healthy and FILLED WITH VEGGIES!
Here’s what you need:
1 onion
4 stalks of celery
2 carrots
4 large potatoes (2 will be chopped up and 2 will be boiled separately and blended)
1 can of corn
1 box of vegetable broth
1 tsp vegeta
1/2 tsp onion salt
pepper to taste
Here’s how you make it:
First, I diced carrots, celery, onion, potatoes (I used purple because I didn’t have enough regular ones at home)
Simmer the veggies in 2 cups vegetable broth and add seasonings. I used vegeta, onion salt, and pepper! Let this cook for about 20 minutes!
In a separate pot, boil your chopped regular potatoes in the remaining veggie broth
After the potatoes are boiled and fork tender (approximately 15 minutes), I added in half a can of corn and used a handheld blender to blend it all together, broth included! (this is how I make the soup “creamy”)
Combine the blended corn and potatoes with the other vegetables, add the rest of the canned white corn and simmer for about another 10 minutes. Enjoy!!
