Vegan Chickpea Salad

If you’re craving something healthy but also totally satisfying for lunch, THIS recipe is for you!

Here’s what you need:

1 can of chickpeas

1/2 red onion, diced

2-3 celery stalks, chopped

4-6 green onions, chopped

1/2 cup veganaise (you can use regular mayo too, I was just making this recipe vegan)

1 tbsp tahini

1 tbsp mustard

Salt and pepper to taste

 

PS! Eat solo, on bread, or I used pretzel chips to dip in! In my opinion thats the best way! Also great with avocado.

 

Here’s how you make it:

Rinse and drain your chickpeas and put in a bowl and lightly mash with a fork or a hand held masher

Then add in your chopped celery, red onion and avocado and mix

Add in your veganiase, mustard, tahini, salt and pepper and mix everything together so that all of the chickpeas are coated

You can serve on bread, in lettuce wraps or with crackers!! Totally up to you!
