Chicken Tender, Cheddar, Bacon, Ranch Salad

This salad is perfect if you’re craving a salad but don’t want to be ~too healthy~! This dish is so easy to make but is so yummy! It’s packed all the good stuff: chicken tender + ranch salad with roasted white corn, bacon, cheddar, green onion, and tomato (avo is really good in here too)!

SERVING SIZE: 2-3

FOR THE SALAD:

5-6 packed cups of romaine lettuce, finely chopped

1 cup roasted corn

2/3 cup uncooked bacon, finely chopped

5-6 chicken tenders

1 cup shredded cheddar cheese

FOR THE DRESSING:

2.5 tablespoons mayo

1 tablespoon ranch seasoning

1 tablespoon olive oil

The recipe:

Create your bacon bits by finely chopping your bacon into small strips. In a pan, stir and cook the bacon until golden brown and crispy.

Once your bacon cooks, strain your bacon from the grease and put on a plate with a paper towel to get rid of the excess grease. Set aside till later.

Feel free to use either your bacon grease or olive oil to roast your corn on the stove by cooking on medium to high heat for 2-3 minutes until you get the char you desire.

Finely chop your head of romaine & wash thoroughly. Remember to pat dry or strain so you don’t have excess water in your salad!

Cook your chicken tenders according to packaging ( I prefer in the oven/air fryer to keep them nice and crispy) and chop them into bite-sized pieces.

Now it’s time to make your dressing! In a small bowl, combine your mayo, ranch seasoning, and olive oil for a ranch dressing! If you have ranch dressing on hand feel free to use that instead!

In a large bowl, combine your romaine lettuce, roasted corn, bacon bits, shredded cheddar, chicken tenders, and ranch dressing.

Enjoy! Feel free to top with a little extra cheddar!
