Chicken Caesar Cups

Here’s what you need:

Romaine

For the chicken salad:

1 cup shredded chicken

1 tbsp mayo

1 tbsp caesar dressing

1 tsp olive oil

2 tbsp parmesan cheese

3 tbsp green onion, diced

squeeze of lemon

Garlic powder, salt & pepper to taste

For croutons:

2 slices of sourdough bread (best if it’s going stale)

1 tbsp olive oil

1 clove of crushed garlic

Couple dashes of salt and pepper

Here’s how you make it:

Mix all chicken salad ingredients together in a bowl

Homemade croutons: placed cubed bread in a pan on medium heat for 5 minutes with olive oil, garlic and pepper! cook until the bread starts to get nice and brown and crispy!

Wash romaine leaves, fill each piece with chicken mix, then add sliced avocado and top with croutons! I also added another little sprinkle of parmesan cheese to these cups as well!
