YOU GUYS!!! This vegan Mac and Cheese recipe is actually SO FREAKING DELICIOUS!!!! I had never tried it before, so I wasn’t sure how it was going to turn out but WOWWW!!! It is SO GOOD and I can’t wait for you to try. One of my favorite comfort foods is mac and cheese! But sometimes I don’t feel the best after eating a bowl of that creamy deliciousness filled with tons of cream and cheese and butter, so I tried to make a lighter version that would be easier on my stomach and filled with more nutritious ingredients!
Here is what you will need:
1/4 cup cauliflower, boiled
1 large carrot, boiled
2 tbsp nutritional yeast
1 tbsp olive oil
2 tbsp almond milk
Couple shakes of paprikaÂ
Couple shakes of garlic salt (I do heavy garlic salt)
Boil the carrots and cauliflower until fork tender. Then add to blender and add in the rest of your ingredients. Blend until smooth and add to your favorite pasta or use on top of chicken or roasted vegetables!
