Smashed Pea Toast

I was in a restaurant in Montana a few weeks ago and they had a pesto pea dip that was out of this world! So I tried to recreate this recipe and decided to put it on toast (kind of like avocado toast, but lighter) and it came out SO GOOD! I made it for my entire family and everyone loved it! And it’s super easy to make! Hope you enjoy!

Here is what you will need:

1 cup of frozen peas, cooked

1/2 avocado

1/4 cup pesto

1/2 cup ricotta

1 tbsp olive oil

Juice from 1/2 a lemon

1 clove of garlic

Salt and pepper to tast

2 slices of your favorite toast

Handful of chopped tomatoes

A few basil leaves

 

Here is how you make it:

In a bowl, mash together peas, avocado, pesto, ricotta, olive oil, lemon and garlic with a fork until most of the peas are smashed and the mixture looks spreadable! Then add salt and pepper to taste! Then spread the smashed pea mixture on your favorite piece of toast and top with chopped fresh basil leaves and diced tomatoes!
