Here’s what you need:1/2 head of cauliflower, cut into florets (or like 1 cup florets)1/2 cup black beans2 green onions, diced1/4 red onion, chopped1/2 cup diced tomatoes1 cup shredded lettuce2 corn tortillas Here’s how you make it:Cut up cauliflower into smaller pieces and coat with olive oil, garlic salt and chili powder, and bake in the oven at 420 degrees for about 20 minutes. In a frying pan, add a little bit of olive oil and lightly fry a corn tortilla until crispy. In a small side bowl, mash black beans and then add a thin layer of the mashed beans on top of the fried corn tortilla. Then top with baked cauliflower, red onion, diced tomato and avocado. Add lettuce and vegan chipotle aioli (I used veganaise with a touch of water).
