I had the most amazing broccoli chicken quesadilla in Lanai and I just knew I had to have it again. So without further ado, my remake version is here and it is spectacular. My mouth is watering as I edit this video oh my goodness. HERES THE RECIPE!
The Recipe:
Stove top grill your chicken in Lawry’s salt, pepper, chili powder. I like to crisp my chicken on medium to high heat for 2 min on each side, then simmer to medium low until chicken is cooked through.
Remove your chicken from the pan and dice.
In a sauce pan or pot, boil your broccoli and cover for 4 min. Strain once tender to remove excess water then dice.
Dice your red onion.
Coat the pan with a little butter. I used same pan for flavoring and bc it’s easier. 😉 Toss on your flour tortilla and layer with cheese, chicken, broccoli, red onion, and more cheese. In total I used around 1 1/4 cup shredded cheese for both quesadillas.
Cook til crispy and melty!!!!
Top with any toppings like sour cream, avocado, hot sauce… ENJOY!!!🫶
