This recipe is a completely vegan dessert that is so SO easy to make and you can use frozen berries too in place of it if you don’t have fresh berries on hand! I love how simple and refreshing this dessert is! NOTE: can be fully vegan if you sub coconut oil with butter which is amazing!
The recipe:
Preheat your oven to 350 degrees.
Wash the berries thoroughly to remove any dirt and excess water. Pat them dry to ensure they’re not too moist. Cut the strawberries into small, bite-sized pieces.
Place the prepared berries into a baking dish.
Add your berries to a baking dish and now it’s time to prep the crumble!
Blend your 2/3 cup oats till the texture is fine.
Then add to a bowl with coconut sugar, regular oats, cinnamon, maple syrup, coconut oil (or butter), and salt. Mix until well combined, then set aside.
Squeeze fresh lemon juice over the berries, then evenly layer the oat crumble mixture on top.
Bake at 350 degrees for 25-30 minutes or until the crumble is golden brown and the berries are bubbling.
Serve the warm berry crumble with optional toppings like vanilla Greek yogurt or whipped cream. Enjoy!! xx
