Beets & Goat Cheese Salad

If you’re not the biggest fan of beets – I promise, this recipe will 100% change your mind! This blend of flavors is such a great combo, so light and fresh! And it’s so simple to put together, you can easily make it in under 10 minutes!

Serves 2

2 cups arugula

1 tbsp olive oil to dress the arugula

1/4 cup pine nuts to top

2 cup diced beets

1/4 lemon, to squeeze

Equal parts goat cheese to greek yogurt, I did about 1/3 cup each!

Seasonings: salt and pepper to taste

The recipe:

For the base of the dish, in a bowl, mix your goat cheese, greek yogurt and lemon juice in a bowl. The greek yogurt and lemon will help really freshen up your bowl and help to cut how strong of a flavor the goat cheese has!

In another bowl, go ahead and mix your arugula and olive oil. Dice your beets into bite-size pieces and you’re ready to assemble your bowl! 

Layer your bowl starting with your goat cheese & greek yogurt mixture. Add your beets, then arugula. 

Lastly, sprinkle on your pine nuts and add salt and pepper to taste. Enjoy!! xx
