Cauliflower Tostada

Cauliflower Tostada

Here’s what you need:
1/2 head of cauliflower, cut into florets (or like 1 cup florets)
1/2 cup black beans
2 green onions, diced
1/4 red onion, chopped
1/2 cup diced tomatoes
1 cup shredded lettuce
2 corn tortillas

Here’s how you make it:
Cut up cauliflower into smaller pieces and coat with olive oil, garlic salt and chili powder, and bake in the oven at 420 degrees for about 20 minutes.

In a frying pan, add a little bit of olive oil and lightly fry a corn tortilla until crispy.
Ā 
In a small side bowl, mash black beans and then add a thin layer of the mashed beans on top of the fried corn tortilla.
Ā 
Then top with baked cauliflower, red onion, diced tomato and avocado. Add lettuce and vegan chipotle aioli (I used veganaise with a touch of water).Ā
