A quick and easy lunch or dinner idea!
Here’s what you need:
2 flour tortillas
1/4 cup shredded cheddar cheese
1/2 lb vegan beef
1/4 red onion
1/4 cup corn
1 tbsp taco seasoning
Here’s how you make it:
In a sauté pan, add in your protein of choice. I’ve been trying to eat more plant based recently so I’m using a beyond meat ground beef. But you could use regular ground beef or ground turkey here as well!
Once the meat is cooked after about 10 minutes, add in the corn, red onion and taco seasoning and cook for 3-4 more minutes or until the veggies have softened.
Take the tortillas and add a little bit of cheese in the middle.
Add the protein and veggie mix to the quesadilla (you can feel free to add a little bit more cheese on top as well), then fold in half, and add some olive oil on the outside and broil for 1-2 minutes on each side until the tortillas are nice and crispy!
Top with shredded lettuce and sour cream! You can also add some avocado and hot sauce too!
