Toasted Kale Salad

I made an UNREAL kale salad and just had to share the recipe with you guys!!

Here is what you will need:

2 cups of chopped kale

1/2 cup walnuts, toasted

1 large carrot, shredded

1/2 cup chickpeas

2 green onions

1/2 cup bread crumbs

1 tbsp olive oil

2 cloves of garlic

1/4 cup crumbled feta

1/2 sliced avocado

Optional: grilled chicken

Dressing: olive oil, lemon, touch of vinegar, salt and pepper to taste!


Here’s how you make it:

First, wash and de-stem kale leaves then finely chop. Then massage the shredded kale with olive oil with your hands! This is one of the most important steps that will soften the kale and make all of the ingredients stick to every piece of kale!

One of the best parts of this salad is the toasted walnuts. So let’s toast them up! Just chop up your walnuts into smaller pieces and roast them on the stove for a few minutes. No oil or anything else needed! Keep an eye on them because they can burn pretty quickly!

Add the toasted walnuts to the kale and then add shredded carrot, green onion and chickpeas.

Next we need to toast our bread crumbs, put your breadcrumbs in a pan in some olive oil and 2 crushed cloves of garlic. It takes a little bit of effort to meal these but it is SO worth it.

Top with feta and toasted bread crumbs!

Time to add the dressing: olive oil, lemon, a touch of vinegar and salt and pepper!

Then if you want you can add a protein of your choice (I used chopped up grilled chicken) and some avocado!
