This salad is the perfect lunch meal. It’s easy, tasty, light, nutrient packed with only a few ingredients.
What You’ll Need:
Serves 2
2 Cups arugula
4 chicken breast tenders
1/4 cup feta
1 teaspoon olive oil
1/2 cup ready to eat beets, diced
For the dressing:
1 tablespoon olive oil
1 teaspoon Worcester sauce
1/4 lemon squeezed
1/2 teaspoon vinegar
Salt and pepper to taste
1/2 tablespoon finely chopped shallots
1 teaspoon honey
What to do:
Whip up the dressing together first, because it should sit for a little to get all the flavors soaked up!! I like a lot of salt and pepper in this dressing, but make sure to do it to your taste.
Then, in a medium sized pan, throw in the olive oil and chicken tenders. Cook in salt and pepper.
As the chicken is grilling, side aside the arugula, beets, and feta. I actually like the put the dressing over ALL three of these ingredients, because I want the flavors to really blend.
Once the chicken is cooked, dice it up, and throw it on top!
