This orzo chicken noodle is one of my fave comfort foods because you really get a little bit of everything in every bite. It’s packed full of flavor and will warm you up on those chilly fall & winter nights!! So, grab your blanket and cozy up by the fire – let’s make this perfect bowl of chicken noodle!!
SERVING SIZE: 2-3
1 cup onion, diced
1 cup celery, diced
1 cup carrots, diced
2 tablespoons butter
1 tablespoon flour
5 cups chicken broth or whole carton
2/3 cup uncooked orzo
1 1/2 cup shredded chicken (I used rotisserie but feel free to use whatever you have on hand!)
2 tablespoons better than bouillon
1/2 tablespoon lemon juice
Seasonings: Salt + pepper + garlic powder
The recipe:
Prep your veggies by dicing your onion, celery, carrots. I also recommend shredding your chicken beforehand so it’s ready to go!
Sauté your veggies in a stockpot on low-medium heat for 5-6 min with butter. Adding in your seasonings of garlic powder, salt and pepper. Stir in your flour and add in your chicken broth.
Bring to a boil then bring back to low to medium heat if you increased it, and add your uncooked orzo to the pot. Simmer for 7-9 minutes then add your shredded chicken.
Stir in your better bouillon and lemon juice and simmer for another 2-3 minutes or until the orzo is your preferred texture.
Serve with some fresh cracked pepper and enjoy!! xx
