For the dressing:
1 garlic clove
2 tbsp olive oil
1/2 lemon squeezed
1/2 tbsp red wine vinegar
1 tsp worcestershire sauce
1/2 tsp Italian seasoning
For the salad:
1 zucchini diced, roasted (in the oven or in a frying pan for 5-6 minutes with some olive oil) & chilled
1/3 cup diced mozzarella
1/3 cup diced tomatoes
1/3 cup diced olives
1/3 cup diced salami
1/3 cup diced chickpeas
1/3 cup diced red onion
The recipe:
This recipe is SUPER easy which I love, especially on a weekday! All you do is mix together all of the dressing ingredients in a small bowl and then dice up all of the veggies, salami and cheese and mix well in a bowl!
