Healthified Protein Packed Cast Iron Chile Con Queso w/ Roasted Corn

My goooshhh it’s good. I love football season because I loveeee good game day food, and since it’s BACK THIS WEEK🏈 (!!!!) I decided to come in hot with this Healthified Protein Packed Cast Iron Chile Con Queso with Roasted Corn. With the beef, cheese and cottage cheese, this dip has a great amount of protein. PS. If you have a bigger cast iron skillet than 8 in, just up the ingredients a little bit to fill your pan.

SERVING SIZE: 4

1 tablespoon nutritional yeast

1.5 cups Mexican Cheese blend

1/3 cup water

12 oz cottage cheese

6 oz ground beef

2/3 cup pico de gallo

1 cup corn

1 tablespoon taco seasoning

1/2 cup of Mexican cheese, to top

Siete tortilla chips, or chips of choice!

Optional: green onions, diced to top

The recipe:

Sauté your ground beef for 3-4 minutes in your cast iron with a little bit of olive oil. Add in your corn, pico de gallo & taco seasoning and sauté for another few minutes till everything is cooked through.

In a bowl or jar use an immersion blender to blend together your cottage cheese, Mexican cheese blend, nutritional yeast & water till smooth! If you don’t have an immersion blender – a normal blender works just the same!

Add your blended cottage cheese mixture to your cast iron and cover your sautéed beef & veggies!

Mix to combine and top with your 1/2 cup of remaining cheese. Broil in the oven on high for 3-5 minutes or until the cheese is melted.

Top with your optional diced green onions & serve with your favorite tortilla chips!! I promise you will LOVE!! xx
