This chopped salad is so delicious because everything is diced so small that you get a little bit of each flavor profile in every bite! (The key to a great chopped salad is making sure to chop all your pieces as small as possible.) This dish is amazing for meal prep, large parties or even to turn into sandwhiches😉
The recipe:
First shred your chicken and add to a large bowl.
Then, rinse and drain your chickpeas.
Prep your veggies by dicing your cucumber,red pepper, red onion, pepperoncinis, and black olives. Dice your mozzarella & finely chop your salami.
Add all your prepped ingredients to the bowl & now it’s time to make the dressing!
In small bowl mix together your mayonnaise, Dijon mustard, olive oil, lemon juice, red wine vinegar Italian seasoning and salt. Mix and taste to adjust according to your preferences!
Now it’s time to mix it all up! The consistency should be on the thicker side.
Pour your dressing over your prepped salad and toss!! Enjoy as is or you can transform it into sandwiches like I did!😉
OPTIONAL: If you want to make a chopped chicken salad sandwich – I used Hawaiian rolls / Brioche buns but feel free to use whatever bread you have or like! I promise it’ll still be delicious!!
Add your sliced provolone, romaine & top with your chopped chicken salad!!
