This quinoa + 6 minute egg dish is SOOOO GOOD, and filled with so many different nutrients, in just so little of ingredients. It’s packed with protein, healthy fats, good fiber, and will give you great energy.
I wish I could have this for lunch/dinner every single day, and my mouth is watering right now because I am just typing it out.. Anyways, I think you’ll love it.
Here’s What You’ll Need:
-1 cup quinoa (cooked as directed on package, usually 1 cup quinoa to 2 cups water)
-1/3 cup slivered almonds
-1 cup spinach
-1 cup kale
-Olive oil, salt, pepper
-1/2 teaspoon minced garlic
-Couple drops white wine vinegar
-Cook quinoa as directed on package.
-Boil water for the eggs. Drop in eggs (with shell!!) for approx 6 min.
-Saute the spinach, slivered almonds, and kale in a saucepan, with garlic, olive oil, salt, pepper.
-Once quinoa is ready, mix in with saute pan.
-Add in a bit more olive oil, salt and pepper, and mix on medium heat.
-Add avocado on top!
