Hi lovers!
This is a PERFECT salad to make!! It’s light, healthy, easy and yummy!! And if you’ve been a follower of mine for a little now, you know I am NOT a big salad girl .. hahah I love my REAL hearty meals, but this salad is soooo good!

Here’s What You’ll Need:
Serves 2
-4 Cups Leafy Greens
-1 medium sized tomato
-1 cup beets
-1/3 cup goat cheese
– 1 avocado
Dressing: (mix together outside of bowl)
-4 tablespoons olive oil
-1/2 teaspoon red wine vinegar
-1/2 teaspoon white wine vinegar
-1/2 teaspoon Worcestershire sauce
-1 squeeze of lemon
-Salt and pepper
Steps:
In a large salad bowl, place in the greens, diced tomatoes, diced beets, and avo. For the goat cheese, I love frying it in a sauce pan with a little bit of olive oil. Only for about 3-4 min. Top the warm/fried goat cheese on top of the sauce. Toss in the sauce with a little more salt and pepper.
