Warm up with this Creamy Cauliflower, Broccoli, Cheddar & Bacon Soup, a rich and comforting blend of tender veggies, crispy bacon, and melted cheese. It’s a hearty, flavorful soup perfect for cozy nights in!!
The recipe:
Boil the diced cauliflower for about 20 minutes or until soft. Drain the water.
Return the cauliflower to the pot, add the broth, and use a hand mixer to blend until smooth.
Stir in the diced broccoli and onion, then add garlic powder and butter. Cook on low heat for about 10 minutes, or until the broccoli is tender.
Lightly pulse the soup with the hand mixer or immersion blender to blend a bit of the broccoli but leave some chunks.
Stir in cheese, pepper, salt, paprika, half & half, and crumbled bacon. Simmer for an additional 15 minutes.
Top with green onions, extra bacon, and more cheese before serving. Enjoy!
