This Simple Avocado & Tomato Pesto Salad combines creamy avocado with juicy tomatoes and a fresh basil pesto for a quick, refreshing side dish. It’s an easy way to add a burst of flavor and color to any meal!

The recipe:

Cut up the tomatoes and avocado into thin sliced. I wanted to make mine look all pretty so I assembled it in a bowl, alternating with slices of tomato and avocado (but you definitely don’t have to do this).

Drizzle pesto over the avocado and tomato slices.

Then squeeze 1/2 a lemon and drizzle some olive oil on top.

Add toasted pine nuts (to toast them, all you need to do is add some pine nuts to a frying pan and roast for about 4-5 minutes until they start to brown!)

Add freshly grated parmesan cheese! You can add salt, pepper, and red chili flakes, to taste!

• ▢ 1 avocado
• ▢ 3 tablespoons pesto
• ▢ 1/2 lemon, squeezed
• ▢ 1-2 tablespoons olive oil
• ▢ 1/4 cup pine nuts
• ▢ 1/4 cup freshly grated parmesan cheese
