Simple Avocado & Tomato Pesto Salad

The ingredients:

2 heirloom tomatoes

1 avocado

3 tbsp pesto

1/2 lemon squeeze

1-2 tbsp olive oil

1/4 cup pine nuts

1/4 cup freshly grated parmesan cheese

The recipe:

Cut up the tomatoes and avocado into thin sliced. I wanted to make mine look all pretty so I assembled it in a bowl, alternating with slices of tomato and avocado (but you definitely don’t have to do this)

Drizzle pesto over the avocado and tomato slices

Then squeeze 1/2 a lemon and drizzle some olive oil on top

Add toasted pine nuts (to toast them, all you need to do is add some pine nuts to a frying pan and roast for about 4-5 minutes until they start to brown!)

Add freshly grated parmesan cheese! You can add salt, pepper, and red chili flakes, to taste!
