The recipe:
Preheat the oven to 400 degrees.
Wash your potatoes thoroughly and pat completely dry.
First, we need to bake our potatoes. There are two options to bake the potatoes: You can microwave until tender (which takes about 5-6 minutes), or poke 3 to 4 times with a fork for each potato. and bake for 40 min (flipping the potatoes over after 20 min) at 400 degrees. Microwaving is definitely easier, but needs more hands on work because you are switching out the potatoes, but I like to cook 2-3 at a time!
Cut your potatoes in half and let cool down for a minute or two to protect your fingers from being burnt.
Once the potato skins are ready, scoop out the middle part so that you have just the skin and a thin layer of potato left. Make sure to reserve the potato insides in a large to make the filling later.
You want to make sure that you have enough room for the filling! Now, put the skins back on the baking tray and drizzle with some olive oil. Cook for about 5-7 minutes so that they can get extra crispy.
In your bowl of potato, add your butter, sour cream, cheese, salt and pepper. Mix till combined.
While the potato skins are crisping up in the oven, in a skillet on medium heat cook your ground chicken with salt, pepper, and a little bit of olive oil. Should take about 7-8 minutes to cook through.
Once your chicken and potato skins and filling are done, it’s time to assemble.
Layer your potato filling in your potato skins with enough room for your ground chicken and additional cheese to top.
Bake for another 3-4 minutes or until the cheese is melted.
Top with your chipotle sauce and green onions! Enjoy!! xx
