Chicken Sauté Fried Egg Bowl

Chicken Sauté Fried Egg Bowl

A quick and easy weeknight dinner recipe idea! This is so delicious and takes about 15 minutes to pull together!

Here’s what you need:

SERVES 2

1 cup of cooked white rice

1/2 onion

1/2 cup mushrooms

1/2 cup shredded cabbage

1 clove of garlic

1 package of chicken tenders (approximately 1 lb)

2 eggs

Green onions

2 tbsp soy sauce for rice

2 tablespoons teriyaki sauce of choice for chicken

Garlic powder + onion salt for seasoning

Optional: chili oil to top (highly recommend! I get mine from Trader Joes)

 

Here’s how you make it:

Cook rice according to the package!

In a frying pan, add some olive oil to coat the pan and cook the chicken for about 5 minutes on each side on medium heat. Add seasonings and teriyaki sauce. Once the chicken is almost fully cooked. Then take the chicken off the pan and chop up into smaller pieces.

In the same frying pan, add garlic, onion, mushrooms and cabbage and sauté until veggies are softened and browned. Add salt and pepper to taste!

You can now use the same frying pan to cook the eggs! I like mine extra crispy for this recipe so I’ll leave them on the pan just a more minutes than I normally would)

Add rice to a bowl, add soy sauce to rice, then add chicken and veggies. Top with fried egg and green onion. ENJOY!!
