I love potato skins as an app, but sometimes they can be a little heavy and typically I only want the bites that have all the toppings on them! So I decided to take the best part about them (the toppings, obviouslyyy) and add them to thin potato slices instead…Much better potato to topping ratio 🙂 It’s a perfect recipe if you’re having people over to watch a game or if you just need a quick app idea!
Here’s what you need:
4 large potatoes
1/2 cup cheese (or more hehe)
6 Bacon slices
1/2 cup diced green onions
2 tbsp parsley
Sour cream, to taste
Salt and pepper to taste
Olive Oil
Onion powder/salt
Optional: hot sauce and paprika
Here’s how you make it:
Thinly slice up your potatoes and spread them out on a baking dish
Drizzle olive oil and season with salt and pepper and onion powder/salt- either works. I also do a TOUCH of paprika because I love the flavor.
Bake the potato slices in the oven at 400 degrees for 10-15 minutes. Depends how thick you cut the slices, just watch them until they look golden brown.
While the potato slices are in the oven, cook up the bacon (I like cooking the bacon until it is crispy because that will make it easier to crumble)
Take the potato slices out of the oven and top with cheese and put back in the oven for 5 minutes or until the cheese on top has completely melted
Then top with bacon crumbles, chopped green onion, parsley, and sour cream (feel free to add some hot sauce here, too if you like a little spice)
